The post about my new hat, my first april fools day joke and more food!!

 This is my new look.  Love this hat.  I look so slim in this!!!!




 This is the first joke that was played on my for April Fool's day!  And to think my wii scale had it in it to trick me.  I thought it really wasn't working.  Every single morning when I wake up, I like to check my weight, and I was disappointed when I read that it was not working.  I thought oh no what am i going to do now? It is routine for me to check my weight every single morning....and then after my initial panic, I read the rest of the lines and then I had a good laugh.  I cannot beleive i was fooled!!!





This is left over chicken wings from my lunch. I had the left over wings for dinner.  i like to eat chicken wings when I go out because it has a lot of fat in it, and I like to eat my fat.  50% fat and 50% protein..yummy!!!  always with melted butter for the sauce.  I also cut up eggplant and fried them in butter, thats what the fries looking things are, and I also have an egg. It was really taste.


This is dinner that my friend made me.  hotdogs without the bun, because I eat lchf, as well as asparagus.  The sauce on the bottom is melted butter.

Popcorn and being out of ketosis-Sophie

I went to a dance club and was having some fun with friends.  We were throwing popcorn at each other and catching it in our mouths.

I thought that having a few peices couldnt hurt....boy was I wrong!  It was all fun that time, and I got really into it.  We made a huge mess and a lot of the popcorn ended up on the floor.

I was really tired for the next 3 days and i feel tired and lethargic and really sleepy when i have carbs.  This is why I like to stay low carb.  I thought the feelings would go away after a couple of days on their own but they didnt because i was knocked out of ketosis.  So yesterday, I did the sensible thing and decided to go on a fat fast, thats where i made sure 90% of my calories came from fat.  I had my 65 grams of protein so i could make sure i do not use muscle mass. i only had .4 grams of carbs which was 2 cups of cooked kale.  I woke up today feeling good an refreshed and swore never to have popcorn again.  This fat fast really did the trick, I only did one day of it and i felt good. I did not do it for 3-5 days as recommended when you are on a stall or need to get back into ketosis.  one day was enough.

each time i cheat and have carbs it does not end too well, so i keep that to  a minimum. i do not like to cheat because i like my progress.  Some people can carb up one day a week and it works for them, but for me I just don't like the icky feeling that carbs give me so I tend to stay away from them.

I am back in ketosis!!!! I am so happy to be in fat burning mode.  I feel energetic, i feel lively and I feel like my good old happy self

Mardi gras dinner-Sophie

I went to a mardi gras pancake dinner last week.  I don't eat pancakes, I just went there for the fun of it.  I wore beads, talked to people and had a great time.  There will be times when you go to parties and events and the only food available is high carb food.  What i would suggest in those times is to eat before you go.  There is no reason you should not be able to socialize just because you eat differently than other people now.

I also drank water there, water is a good option for a party.  I got really hungry so i cut a slice of butter and ate that. I was not hungry anymore after that.  I had a great time.  I think i had 4-5 different beads on me.

It feels like I am seeing holidays for the first time as a low carber.  And each holiday brings about some bitterness that I am not able to enjoy the foods that i used to.  each holiday I feel is based too much about foods.  So I am going to start making the holidays be about traditions.  Mardi Gras about wearing beads.  Valentines day about flowers and lint 90% chocolate because as a low carber, that is the only chocolate that i eat.  I need more low carb friends to celebrate the holidays with...

July to March progress and happiness-Sophie


The top picture was taken in July before I started low carbing.  I started in August.  The bottom picture was taken in March, about a week ago.  there has been a HUGE difference.   I feel more confident and that I look and feel better.  Other people are starting to notice a change.  I used to be the invisible girl that no one used to notice, but now people take notice of me.  People are being friendlier to me now, more people want to dance with me at club, and more people want to talk to me.  Things are definitely different.  I have never ever gotten attention before because I was a lot bigger, its just nice to finally being noticed.  I am done with my weight loss journey yet, i am just at the halfway point and there is more to come!!!!

Day 35 - Weigh in wednesday

HAPPY VALENTINES DAY!!!!--Sophie








Happy Valentine's day!!! I know this post is late--sorry!!!
I went to a girls night out Valentine's day party because I am single and have no boyfriend!  There is still love with friends.  I only ate the cheese cake squares I bought and some vegetables.  I bought chocolate sauce for everyone else to sweeten theirs with.  Most people eat very sugary things, I don't.  I was the first one to arrive at the party so I only got pictures of what I bought and what the hostess bought---sorry.  She had some cookies as well as her vegetables tray.  The other foods were ice cream cake, cupcakes, brownies, cookies, etc.  I was the only one that liked mine as I am on a high fat diet whereas everyone else is on a low fat diet.

Each time, its a holiday, it feels different now.  This was my first valentine's day low carbing. I usually go to the stores the day after to buy all the remaining valentine's day candy at a 90% discount.  This year I did not do that. I usually indulge in some ice cream at the mall or some kind of desert for valentine's day,  but this year I did not do the usual.  I instead made some cheesecake squares, I indulged in some lindt 90% candy and I made myself some homemade candy (fat bombs).  I always have fat bombs in  the fridge.

It felt a little lonely not going for the usual valentine's day high sugary foods. I have strong will power because I dont want to be knocked out of ketosis and get keto flu. It was nice to watch all those other foods, even though I did not eat any.  It just felt like I was missing a peice of myself because I was not eating the usual for valentine's day.  Last year was also my first thanksgiving and christmas low carbing.  Its a new experience to not be able to eat all your usual favorite foods and to come up with new ones.  I did have lindt 90%, made homemade candy and the cheesecake, but it still just felt like something was missing because this was a new tradition.  As time passes, I hope that I am able to create new traditions and accept them and celebrate them.  I had a great time eating what I did, but I did feel that emptiness.

The party was fun, we exchanged valentines, so I KNEW people loved me!!!  I am holding I heart you magnets that a friend made through her scarp book.  Its really cook, I love that homemade gift.

Have a happy valentine's day and there will be many many more.  We just have to create new traditions and eat anything we want---provided we make it ourselves.  Hope all of you enjoyed your holiday.  I know Neta---The other broke low carber, cooked her husband beef heart for dinner.  It was valentine's day themed because it was a heart.

Why I no longer use Myfitnesspal-Sophie

I am no longer using myfitnesspal. While it is IS nice to share what I'm eating, I found out that I was micromanaging my meals and not getting enough protein and too much fat because I was trying to hit certain numbers.  I wasnt feeling that well and had some brain fog and was losing hair.  Now I am just listening to my body to lose weight.

Listen to you body, it know what it wants!!!!

Eating on Food Trucks



Eating out is always a challenge. The first picture has 2 plates. One is mine and one is someone else's.  Guess which one is mine?  Mine is the one without the bread.  It was a chicken taco without the bread.  I was not very satisfied after eating it because it was small and it was low fat.  there was no extra butter that I could ask for on the food truck.  Its limited fat on trucks.  Wish they would carry lots of butter for my tastes.  The second pic is just my food by itself in case you could not guess which one was mine and which one was someone else's.

What really satisief was pictures 3 and 4.  they are chicken skin balls deep fried with a lot of grease. i dont remember the rest of what was in there, just remember that it was a lot of fat. And fat i find very satifying and it makes me full and keeps me full.

there is always something that you can eat when out, whether from a  truck or a restaurant.  Sometimes its hard to find options, but the easy way is to just get something apetizing and ask them to hold the bread.    I was hoping there would be more options, as I really wanted to bite into a chicken leg but could not find that.  I did eat well that day and felt satisfied.  What more can a broke low carber ask for?

Holy Carrots!!!!


I have NEVER in my life seen carrots THIS huge!!!! its big enough to feed an army!!!!  Carrots are something I treat myself to every once in a while.  It tastes like candy to me and super sweet.  I have not had anything really sweet in so long that this tastes like CANDY!!!!!  When you do lchf, you eventually end up with super sensitive taste buds.

Breakfast with a good friend




Do you ever wonder what to eat when you go out?  I dined for breakfast with a really good friend of mine (No sadly, it wasnt Neta)---.  And there are a lot of high carb options, but how can you make your meal low carb?  Here is what I did-
I gave my friend all my carbs---thats why she has much on her side! the potatos were mine and i generously donated them.  She had pancakes, hashbrowns and eggs.  That is a lot of carbs.  I had eggs, steak tips, sweet peppers and onions.  I asked for extra  butter for the side, but when I took one bite,  I knew it was not butter, but actually margarine.

Breakfast was nice. It was nice for me to look at those pancakes, some times i like to see eye candy.  I did not eat any high carb items but ate a delicious low carb meal.  I drank water with my meal.  You can always make any option at a restaurant a low carb option, just give your carbs to someone else or ask the waitstaff not to give it to you.

Eating pizza again after 8 mos!!!!

I have not had pizza in 8 months, because I was low carbing.  One day while browsing, I came across this recipe

My pizza came out looking more like a casserole than an actual pizza


oops, I put WAY too much toppings on it.  My take on it, its very very cheesey.  It wasnt hard where you could just pick it up with your hands, but you have to use a fork to eat it.  It tasted really good, and I didnt miss the high carb pizza.

Ingredients

CRUST
1-8 oz. full fat cream cheese, room temperature
2 large eggs
1/4 tsp ground black pepper
1 tsp garlic powder
1/4 c grated parmesan cheese
TOPPINGS
1/2 c pizza sauce
1 1/2 c shredded mozzarella cheese
toppings - pepperoni, ham, sausage, mushrooms, peppers or any toppings of your choice
garlic powder

Wings!!! the perfect food


These wings were AMAZING!!!!!!!!!!!!
How to cook them- season to taste: Paprkia, garlic, curry, oregano, cayanne, salt oil or butter.  Mix the seasonings with the chicken wings.  Then put it in the over for 1.5 hours at 350 to get them nice and crispy.  Excellent for eating as a snack or as a meal.

Real greek yoghurt.

I wanted to inform everyone that THIS is greek yoghurt. 

What is sold to you as 'greek yoghurt' is in fact, "strained yoghurt". Which is why it is thicker.

Greek yoghurt is traditionally from sheep or goat's milk (nowadays they also come in cow's milk, but the tastiest is the goat's milk one) and there is a skin on top which are probiotics. 

Women on antibiotics consume a small pot of this yoghurt and they avoid yeast infections.

Ingredients are only milk and the cultivation. Nothing else.

If you find this type of yoghurt, you can start making your own by warming up raw milk to 90oC and then letting it cool to 45oC,

mix 1 spoonful of the yoghurt you found with half a glass of milk and mix.

Put mix in the oven at 45oC (or keep it at a warm place) for 4 hours minimum undisturbed.

Let the yoghurt cool down to room temperature and then place in the fridge for 24 hours.
Consume within 10 days.

Eat low fat to kiss ketosis goodbye

Today I was at the mall, and I was really hungry, so I looked around the food court for acceptabletdining options.  Sadly, there weren't much.  I thought my safest bet would be the greek fast food restaurant.  I ordered the chicken kebab with the side salad. it came with cucumber sauce.  There was no margarine.  I think it was made with fat free yogurt because I did not feel very satiated.  And i felt naseous and had a slight head ache.  Yup, i was out of ketosis.

When I got home, I had bullet proof tea (tea with 1 tbsp butter, 1 tbsp mtc oil) I started to feel better and lost the naseous feeling.  Then i had 2 eggs later.  I met some friends at Dave and Buster's and had desert with them after some games.  I ate the wings, I like wings because they are 50% and 50% protein.  I had that with butter as my dipping sauce.

What i did was called a protein fast.  Its where you eat nothing but protein and fat to help you get back into ketosis.  You can also do what it called a fat fast.  These things help you get back into ketosis really quickly when you have a slip, in my case, it was an accidental slip.

I have the metal taste in my mouth now, and yes i am back in ketosis! 

Stay away from low fat products because they remove the fat in it and add sugar which can get you out of ketosis.  I love being in ketosis, not very hungry and life is just good.

Forgot to check for blood ketones, but in the afternoon i was in the 3.3 range which is optimal burning zone!!

Neta's Before and After

Before : 262 pounds.
Dietary choices : Primarily 'instant food' and delivery.
Health condition : Mobility issues, tired very easily.


After : 115 pounds
Dietary choices : Low carb, real foods, clean.
Health condition: No mobility issues, high energy, perfect blood tests.
Exercise: Light/Moderate.


I had a total loss of 160 pounds. At 102 pounds unfortunately I got quite bullied for being 'too skinny' and 'you need to eat a burger' comments.

At first it was funny and, dare I say, flattering. However the comedy waned away after the 20th time I heard that.

Last year I decided to try out raw veganism. For the same reason everyone does.

"For the animals"

However that choice gave me 40 pounds back and I decided to return to low carb and this time I'm vlogging my progress and routines in order for other people on a weight-loss journey to be motivated.

Weight loss is not linear. Especially for women.

You'll have ups and downs and I'm here to show you that it is normal to stall, plateau, doubt yourself and have social pressure.

Zero carb movie snack #2 ! Fast and simple!

Step 1 :
Get pork fat (or beef fat) from the butcher, I find pork fat so that's what i'm working with.

Step 2 :
Cut in pieces the fat. You can cut it in squares for chips or in strips for a replacement of bread sticks for dipping!

Step 3 :
Start rendering the fat in a pot or pan (i'm using a pot) at half the maximum heat your stove allows you. I was told to take out half the fat each time in order to avoid 'burning it'. Not sure what that means but it works anyhow!

Keep the rendered fat in a porcelain container of choice. I'm using a baking pan and then I transfer that in to a jar and keep it in the fridge.

Step 4 :
Season at will and enjoy your movie snack!!

High Fat Butternaut squash soup

I sautéed butternut squash and a bag of minestrone vegetables, several cloves of garlic, and a sliced onion in a stick of butter. Sprinkle some ground cayenne pepper.
I then added 21/2 qts of chicken stock and let it simmer for about 45 minutes. Afterwards, I used my immersion blender to puree it. Frequently check for seasoning to taste. Snip chives and add to it.
I garnished my bowl with a dollop of sour cream and more chives.

I don't measure, just dump. I hope you like it!

Party time!!!

I am SO excited to be famous for being skinny.

I've never been skinny before, and I know I have some more to go, and I'm halfway there.  This journey has been great, I learned to cook.  I never was really much of a cook before.  Diet doc says to cook everything in butter and then it truly does taste AMAZING!!!!

I made some candy today, so I will be celebrating with that tonight.  I"m just really excited  to be featured on the website that got me to be healthy.  I know I should get to my goal by the summer.

Being skinny has given me a lot more confidence than I had in the past.  I used to always think I was too fat.  And I hated looking at myself in the mirror and I hated being in pictures because I was fat.  Now I'm ready to punch anyone in the face who calls me fat.  To be fair, I give them a warning first.  People are smart enough to back away after the first warning.

I also feel that losing weight, I have learned who my true friends are.  I am lucky to have them.  There are people who were jealous that I was losing weight and they kept telling me that I am going to die of a heart attack because they kept watching me add more fat to my food.  My heart is stronger than it used to be.  And I do not spend time with those people, I am only looking to be around positive people who are fun to be around.  Not people with bad energy that try to drag others down with them.

I am not at my goal yet, but I am on my way there!

How to make crispy bacon!


So this is a method I found to make bacon crispy (when I can find actual bacon that has no preservatives or at least has the absolute minimum of 'bad mojo' in them, these had 0.2 carbs per 100 grams)


Step 1 !

Put in a tray some aluminium foil and bake at 150-200 oC until it looks half-way done


Step 2 !

Flip your bacon and let it cook at 100-150 until crispy!







Step 3!! 
Leave the kitchen for a bit and have a hungry guest just eat up your crispy bacon and don't manage to take a picture! Try it out! Cook until crisp to your preference!

Breakfast on a budget


Want to start your day with A LOT of fat?
how about eggs, bacon and avacado?

Really simple, just dry everything in butter.

Its a great way to limit your carbs by having less for breakfast and you also don't spike your insulin levels much

Great for budget eating.  Eggs are cheap, one dozen for $2.   30 cents for 2 eggs.  Bacon is a couple of dollars an avacado is $2.  less than 1/4 was used so that is 50 cents. 1 pound of bacon is about 3.00 at 20 slices so that is 1 cents each, an comes to 30 cents.  Sometimes you can find the pack on sale for 1.29.


Total cost for breakfast is: 1.10

Budget breakfast, big amount of fat and protein!

Beef heart on a bed of vegetables! (cheap recipe)

So, as you can imagine, money is quite low.. So sometimes I need a cheap plan.

This is one of them!


- Half a beef heart
- Half a red bell pepper
- Half a green bell pepper
- Half a tomato

Feeds: 1 hungry low carber!
Estimated cost : 1.80 euros.

Step 1 :

Put the beef heart in a clay pot with spices of choice. If your butcher has cleared the heart from the extra fat, just add butter. Put the lid on and let it roast for 2-4 hours at 150-200 oC.

I generally let it roast for 2 hours at 200 oC then set it to 150 oC for the rest.

Keep the fat!

Step 2 :

Chop up the bell peppers and tomato and place on your dish (or in a bowl) and season to taste.

Enjoy!!

Low carb movie snack!! (0 carbs)

We all want that crunchy-snacky food feeling when we're watching a movie..
Here's one that you'll absolutely adore!!


Pork Cracklings!

Ask for Pork Skin from your butcher. He may or maynot give you skin with a layer of fat. Whatever he gives, we can work with it. Some butchers just give em out for free, some sell them.

 Ask for your butcher to cut the skin in 1 cm width ribbons or do it at home. In order to do it fast, roll it up like a napkin and slice through.


Step 1 (if your pork skin has no fat, skip this step)

- Boil the pork skin ribbons for about 20 minutes. Drain.

Step 2

- Bake the pork skin ribbons for about 30 minutes. Drain (keep the fat)

Step 3
- Deep fry the pork skin for about 30 seconds to a minute in lard or butter. I tried with olive oil but the taste was too heavy. Drain and enjoy!!


Optional*

Season what spices you desire. Make it spicy or savoury to taste! Your call!

Cold tuna/ Hot tuna ! (emergency dish!)

So one of my 'things' is to be able to scrap up a fast dish.
I rarely go by recipe, I'm more of a 'what's in the fridge' type of cook.

Here are 2 dishes with canned-tuna-in-brine that you can do if you don't have much time.



Hot dish :

-Butter
- Drained tuna
- Mushrooms of choice (i use the small white ones)
- Heavy cream
- Nutmeg
-Fresh ground pepper
- Optional: coconut flour (1 tablespoon)

Execution:
Put a sauce pot on the stove.
Set heat to 3 (out of 6)
Put in a few slices of butter, depending on how 'buttery' you want the sauce to be.
Dice the mushrooms and chuck them in!
Let simmer for a few minutes, the butter will first get absorbed, don't add more, it will return to the pot in a bit.
When the mushrooms are cooked and the sauce looks thicker, if it's not thick enough, chuck in the coconut flour and leave it simmer for a minute more.

Put the drained tuna in a bowl, add the sauce.

Voila!! It's a hot dish!!




Cold dish :

- Drained tuna
- Half a tomato
- Half a green bell pepper
- 1 tablespoon of mustard.

Optional choices :
-Dill
-Homemade mayo
- Chopped boiled egg
- raw olive oil

Execution:

Just chop up everything, add all in a bowl, salad style.
Add the mustard in the end and mix it with the salad.
Enjoy a cool dish!!

In the low carb world, we call candy Fat bombs.  The reason is if you need some more fat, you can just eat a couple of these.  Or if you are still hungry after a meal, have 1 or 2.  These are also great to take with you to a party so you have some fats to munch on or healthy desert so to speak.  Every party I have been to always had a lot of sugar laden deserts with a lot of gluten in it.   This is a guilt free desert full of fat! 
Here is what you need-
  • 1/2 cup coconut oil (solid at room temp)
  • 1/4 cup Cocoa Powder
  • 2 Tbsp any sweetener you desire.  I used liquid stevia in this.  You can add more or less depending on how sweet you like this.
  • 1 tsp vanilla extract(gives it a nice vanilla flavor)
  • 1 tbsp heavy whipping cream

In a sauce pan, melt the coconut oil.  Then remove from heat.  Add all of your other ingredients and  whisk until mixed evenly.  It does not take very long.

Pour into silicone molds and put in the fridge.  It should be hardened into candy within the hour.


Stuffed Pepper Recipe

Today's Recipe is Stuffed Pepper.
Its really EASY to make.  You can make a lot of them, cook them and keep them in the fridge until you are ready to eat.  These are GREAT to take with you to a party as a low carb dish so you have something to eat.  They make great appetizers as well as an actual meal.

What you will need

butter
bell pepper (use any color you want, I used green)
ground beef
spices (i used onion power, cayenne pepper, ginger powder, garlic powder.  You can add salt if you desire, i do not)
1 egg

In a frying pan, cook the ground beef until it becomes brown.  Mix in the desired spices while cooking.  You don't need to add any fats when you cook this because it can cook in its own fat.

Cut a bell pepper in half.  Clean out the inside.  Put your cooked beef inside the bell pepper and fill it to the top.  Preheat your over to 350 degrees.  Grease a pan with some butter and put your pepper inside.  Cook for 15-20 minutes.   Check up on it to make sure it is done

In a frying pan, cook an egg with butter.

Once your pepper is done, take it out of the oven and put your egg on top of the pepper.

Its really easy takes less than 5 minutes of prep time.  The oven does most of the work for you so you don't have to do much.
